Chef: Huang Weizhi
Apprenticed under Hong Kong's Fook Lam Moon's Head Chef Mr. Law On, focusing on mastering shark fin dishes. At Ginza Higankaku, Huang enjoys cooking by combining not only the most prestigious ingredients such as shark fin, bird's nest and dried abalone free from artificial flavorings, but also enhancing the characters of each ingredients including Matsuzaka beef, Kagoshima Kurobuta and organic vegetables. "Behind-the-scene works" such as preparing dried shark fin every day to make shark fin cuisines and making shangtang soup broth using generous amounts of Kim wa ham, are fundamental to the tastiness of each delicacy.

A Chinese national born in Yokohama. Zeng has a career of 45 years serving customers in Chinese restaurants. Zeng and his hall staff who are fluent in Japanese, Chinese, English and French all await your visit.

Following the profound history of 4000 years of Chinese cuisine, and yet compensating its unique flaws, Ginza Higankaku is taking on the challenge of creating a next-generation Chinese cuisine under the theme of "Beauty and Health."
 Using not only the most prestigious ingredients such as shark fin, bird's nest and abalone, we gather as connoisseurs, other ingredients such as Matsuzaka beef, Kagoshima Kurobuta (Birkshire pigs), Kim wa ham and organic vegetables, and cook them without using artificial flavorings.
 We can respond to any religious requirements.
